Pink Salmon Showing In Nanaimo

There are pink salmon showing again in Departure Bay which means they will likely be showing at the Millstream soon as well.

While taking the top picture are Departure Bay a lucky angler was on his way home with a 3 pound pink freshly caught. The bottom photo is several fisherman on the point at Maffeo Sutton Park. It is still early for the salmon to be coming in in large numbers, and of course every year is unpredictable as to how many salmon will actually return to their spawning grounds.

There is  a fishing derby planned for the Labour Day weekend by Alberni Outpost which will be a two day event fishing from any 'people power' craft. More details on this derby as we get closer to the event.

While some people turn their nose up at pinks claiming the coho, springs and sockeye are preferred eating, I have always enjoyed a freshly caught and freshly cooked pink, finding their flavour quite pleasant.

My preferred way of cooking is to simply score the skin on both sides, then sprinkle a liberal amount of brown sugar, butter, fresh lemon and worchestershire sauce over the fish. Wrap the whole fish in tin foil and cook on the barbie or oven depending on your preference. Checking after 30 - 40 minutes, making sure not to overcook the delicate fish.
